How to make shahi paneer

Ingredients:

250g paneer (Indian cottage cheese), cut into small cubes

2 tbsp ghee or oil

1 large onion, finely chopped

2-3 cloves of garlic, minced

1 tsp ginger paste

2-3 green chillies, slit lengthwise

2-3 tomatoes, pureed

1/2 cup heavy cream

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp red chilli powder

1/4 tsp turmeric powder

1/2 tsp garam masala powder

Salt, to taste

Fresh coriander leaves, for garnishing

Instructions:

Heat the ghee or oil in a pan on medium heat. Add the cumin seeds and let them splutter.

Add the chopped onions and sauté until they turn golden brown.

Add the minced garlic, ginger paste, and green chillies. Sauté for a few seconds.

Add the tomato puree and cook for 5-7 minutes or until the oil separates from the mixture.

Add the coriander powder, red chilli powder, turmeric powder, and garam masala powder. Mix well and cook for 2-3 minutes.

Add the paneer cubes and salt. Mix well and cook for 2-3 minutes.

Add the heavy cream and stir well. Cook for another 2-3 minutes.

Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.

Tips to make shahi paneer

To make the dish spicier, add more red chilli powder or green chillies.

You can also add cashews or almonds to the gravy for a nutty flavor and creamier texture.

If you don't have fresh tomatoes, you can use canned tomatoes or tomato puree.
